Eggnog Day 2021

Eggnog Day coincidentally falls on Christmas Eve, which in our opinion, is THE most festive day of the whole season!
To celebrate we decided to try something a little different. This year instead of making traditional eggnog, we're making a drink called a Coquito.
What is Coquito we hear you ask! Well... just imagine a traditional eggnog with a tropical twist. Just the thought of it gets out taste buds tingling with anticipation.
Coquito, which means "little coconut", is a traditional festive drink from Puerto Rico. It's a lighter coconutty version of eggnog and an integral part of any Puerto Rican festive celebration.

Ingredients

Serves 6-8

  • 400ml can coconut milk
  • 320ml coconut cream
  • 350ml spiced rum
  • 397g can condensed milk
  • 340g can evaporated milk
  • 1 tsp vanilla extract
  • 1 cinnamon stick
  • ice, to serve (optional)
  • pinch of nutmeg or cinnamon, to serve

Method

1. Pour the spiced rum into a large mixing bowl, followed by the coconut cream, coconut milk, evaporated milk, condensed milk and vanilla extract. 

2. Whisk the ingredients together to fully combine into a creamy texture.  

3. Decant the drink into a large jug (preferably with a lid if you plan to store it in the fridge). Add the cinnamon stick into the jug.

To serve, pour into glasses and add ice. 

Tip: to make your coquito more decadent, add a sprinkle of ground cinnamon or desiccated coconut to either the top of the drink or to the edge of the glass.
